INGREDIENTS
1 cup unsweetened applesauce
½ cup brown sugar
½ cup sugar
2 eggs
¼ cup canola oil
1 C. vanilla essence tea
2 cups flour
½ tsp. baking powder tea
1 C. baking soda tea
½ tsp. salt tea
½. vs. cinnamon tea
¼ tsp. nutmeg tea
1 ½ cups apples, peeled and diced
flower of salt
¼ cup pecans, coarsely chopped
salted caramel
1 cup of sugar
1/3 cup water
¼ tsp. salt tea
1/3 cup 35% cream, hot
PREPARATION
Preheat the oven to 350 F.
In In a bowl, combine the apple sauce, sugar, brown sugar, eggs, oil and vanilla.
In another bowl, combine the flour, baking powder, baking soda, salt, cinnamon and nutmeg.
Add the dry mixture to the liquid mixture. Mix it well.
Add the apples and stir into the mixture.
Place in a loaf pan lined with parchment paper.
Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
When the apple bread is ready, in a small pot, bring the sugar, water and salt to a boil. Reduce heat and cook until everything turns golden brown. Remove from the heat and add the cream, stirring constantly and being very careful, as the liquid may splatter.
Whisk mixing well. Pour the caramel over the apple bread. Add fleur de sel to taste and the pecans.
*You can freeze the bread but without the caramel.
We ate ALL the cake, my daughter and I. EVERYTHING ! We left nothing. I even think I saw my daughter dragging her finger across the bottom of the plate to scrape off the caramel. Real little piggies assumed. Still, I don’t have a sweet tooth, but let’s just say this one fell right into my palette.
I find that it is almost the perfect transition between autumn and its apples as well as winter with its caramel and pecans. With a coffee my friend, it’s pure happiness.
Add a scoop of vanilla ice cream to the hot cake? Perfection! NOTHING LESS, GOOD! I even push by telling you that it could be a great dessert to make for Christmas. YES YES ! I wouldn’t even be embarrassed but I can’t wait to hear from you on the subject!
